How Dongpo Pork Was Born: Su Shi's Recipe for Resilience in Exile

When China's greatest writer was exiled and broke, he invented a pork dish so good it carries his name 900 years later.

Dongpo Pork is one of the most famous dishes in Chinese cuisine — glossy, mahogany-colored braised pork belly that melts on the tongue. But its true origin story has nothing to do with luxury. It was invented by a broke, disgraced, bankrupt poet in a remote riverside town, cooking the cheapest meat he could find, because his enemies had taken everything else. That poet was Su Shi — and the dish became his most delicious act of rebellion.

(In 30 Seconds)
  • Dongpo pork links Su Shi's Huangzhou exile to a dish still eaten worldwide.
  • The story blends food history with literati branding—poet as cultural entrepreneur.
  • Treat recipes as living heritage; treat origin tales with healthy skepticism.
  • It is one of the best 'gateway' topics for readers new to Song culture.

From Imperial Minister to Broke Exile

In 1080, Su Shi arrived in Huangzhou — a small town on the Yangtze — as a disgraced convict. He had narrowly escaped execution after the infamous Crow Terrace Trial, in which political enemies twisted his poems into accusations of treason. Stripped of his rank and salary, under official surveillance, he was left to survive in the cold with nothing but his wits.

Some people crumble when everything is taken away. Su Shi bought a patch of wasteland on the eastern slope of town — which he named 'Dongpo' ('Eastern Slope'), the name that would outlive his official titles — and started farming. The land was barren, the winter freezing, and the market was too poor for good cuts of meat.

The Recipe Written in Verse

Ancient Chinese poets wrote about everything — wine, war, the moon, and, in Su Shi's case, braised pork. In his 'Ode to Pork' (Zhu Rou Fu), he explained his method in a cooking rhyme so practical that historians treat it as the original Dongpo Pork recipe:

苏东坡不仅写诗,还把菜谱写成了诗。他的《猪肉颂》里记录的做法,被后世视为「东坡肉」最早的配方。

Scrub the pot clean, add a little water; let the fire smolder low beneath the wood. Do not rush it — let it cook itself tender; when the heat is just right, it turns beautiful on its own.

Context · From Su Shi's 'Ode to Pork' (猪肉颂), written in Huangzhou — the original slow-cooking manifesto.

The philosophy hiding inside the recipe is quintessential Su Shi: patience. 'When the heat is just right, it turns beautiful on its own' — the same principle by which he cooked pork, and by which he survived exile. He did not fight the fire; he waited for time to work.

The Dish That Outlived the Exile

Later, when Su Shi was banished even further south — to Huizhou in tropical Guangdong — poverty struck again. Too poor for lamb, he bought the sheep spines that butchers threw away, roasted them with wine and salt, and discovered the delicious pickings along the vertebrae. He called the taste 'like eating a crab', and today his invention is known across China as yang xiezi — 'lamb scorpion' hotpot. On Hainan island, at age 61, he took it further: grilling oysters over charcoal, then warning his son in a playful letter not to tell officials in the capital about the taste, 'lest they all rush to be exiled to Hainan to compete with me for oysters.'

Today, Dongpo Pork is a signature dish across Chinese restaurants worldwide — braised in wine, soy sauce, and rock sugar, cut in thick squares, served glistening. Hailed in Hangzhou and Huangzhou alike, it is arguably the most successful 'personal brand' in culinary history: a dish named after a man who ate it because he had nothing left — and turned nothing into a legend.

Did Su Shi really invent Dongpo Pork?

Historians largely agree that Su Shi popularized — and poetically documented — the slow-braised method in Huangzhou around 1080, when pork belly was the cheapest meat available. His 'Ode to Pork' survives as the earliest first-person recipe. The dish was later refined and named 'Dongpo Pork' in his honor, becoming a Hangzhou signature.

What is Dongpo Pork made of?

Thick-cut pork belly (with skin and layers of fat and lean meat), braised low and slow with rice wine or Shaoxing wine, soy sauce, rock sugar, ginger, and scallions. The keys are the 'red' color from caramelized sweetness and the melt-in-your-mouth texture from long, gentle heat.

Why is it called 'Dongpo'?

'Dongpo' (东坡) means 'Eastern Slope' — the name Su Shi gave himself after buying and farming an eastern slope of land in Huangzhou during exile. The dish, like his most famous poems, was born in that same period of hardship.
